LE CHÂTEAU
The Château de Caux et Sauzens is located 5 kilometres to the West of Carcassonne on the banks of the Canal du Midi, both of which are classified as UNESCO World heritage sites.
A RICH AND VARIED VINEYARD
The Château de Caux et Sauzens vineyard spreads over more than 70 hectares at the intersection of the two classified production areas AOP Malepère and IGP Pays de la Cité de Carcassonne. These terroirs are situated in a zone of transition under Atlantic and Mediterranean climatic influences which combine a warm, humid wind blowing from the Mediterranean, called the ‘Marin’, and a dry, mild wind from the Atlantic, the ‘Cers’.
Our wines are produced from vineyard plots situated on terraces of pebbles and on clay and limestone slopes. They perfectly reflect the nature of this terroir and its characteristic climate. The shallow depth of these soils, low in humus content with an excellent capacity for water drainage, enable ideal ripening of the grapes, ensuring elegant aromas and tannins in our wines.
The range of grape varieties used has been made according to rigorous choices to adapt each plantation to the climate and nature of the soils. For white wines : Chardonnay, Sauvignon ; for rosés : Cinsault, Grenache; for reds : Merlot, Cabernet Franc, Cabernet Sauvignon, Grenache, Pinot and Caladoc.
THE FAMILY
HISTORY
The history of the Château de Caux et Sauzens, built at the end of the 12th century, is closely linked to the destiny of Roger Cahuzac de Caux, member of an eminent Languedoc family, who owned the Château until the mid-19th century. In 1871, the Château was bought by the Guitard family who were already landowners in Sauzens long before the French Revolution.
VINES
Although vines have been cultivated on the property since the 16th century, Louis Guitard engaged a major development program of the Caux et Sauzens vineyards at the end of the 19th century. The Château’s wines have attracted countless prizes in wine competitions, of which the most illustrious was a silver medal at the Paris Universal Exhibition in 1900.
THE CHÂTEAU
Owned by the family by the last five generations, the Château is now run by Mr. and Mrs. Boyer who share the wish to prolong a secular tradition : the cultivation of their vineyard according to rigorous methods, respecting the natural environment, to create great wines in the heart of one of the most beautiful vineyard regions of the world.
THE WINES
ROSÉ PAYS D’OC
The rosé wines are produced mainly from Grenache and Cinsault. Benefiting from the Mediterranean sunshine and the mild climate near the Canal du Midi, they present subtle notes of citrus fruit and redcurrant.
WHITE PAYS D’OC
The white wine, produced from Chardonnay grapes, is fresh and elegant. Benefiting from the sunshine and freshness of its terroir, it reveals aromas of citrus fruit, white flowers and spices. Part of the blend is aged in barrels, developing refined complexity.
RED PAYS D’OC
Our red wines, made from a blend of Mediterranean and Atlantic grape varieties are fresh and fruity with scents of red berry fruit and spices. The wines which are matured in barrels develop intense aromas of ripe black fruit with elegant scents of wood leading to a long finish on the palate.
WHITE BARREL PAYS D'OC
Vin blanc 100 % Chardonnay issu d'un élevage en barrique de 10 mois. Il présente des arômes toastés, de noisettes grillées lui donnant un parfait équilibre et une bonne complexité.
RED CITÉ DE CARCASSONNE
Vin rouge issu d'un assemblage de Merlot et Cabernet Franc, élevé en barrique pendant 15 mois. Il présente des arômes d'épices et de réglisse avec une légère note confiturée. Vin rond souple et harmonieux en bouche.
AOP MALEPÈRE
Vin rouge issu d'un assemblage de Merlot et Cabernet Franc, élevé en barrique pendant 12 mois. La robe est d'une belle intensité, au nez il présente des notes épicées et fruitées .

Cet été, le domaine de Caux & Sauzens vous propose une promenade pédestre au coeur de son vignoble suivie d’une dégustation de ses vins au bord du Canal du Midi. En parcourant des sentiers au travers des vignes, vous découvrirez l’histoire du domaine, son terroir, son encépagement ainsi que ses méthodes traditionnelles de vinification qui rend son terroir si particulier.
